Fresh Made Pasta #YUM
On Sunday, I decided to pull out an old gadget I had not used in years. I had only used my pasta machine once after a family member brought it for me. After moving something around in the pantry, I realize my pasta machine need some love. Therefore, this dish started to take shape.
First things first. In making the pasta I used these ingredients
All-purpose flour, eggs, vegetable oil and salt. I place my flour down on a clean surround and formed a well. Inside the well, add the eggs, oil and salt (only a small addition of salt being we are watching our salt intake).
Using a fork, whisk the eggs gradually incorporating the flour until a dough was formed. Then kneaded the dough for a couple of minutes. Allow the dough to rest for 30 minutes.
Cut pasta dough in four pieces, dust with flour and then place each piece through a pasta machine. Start by placing the pasta machine on the highest setting run pasta through machine then lower setting. Continue this process and lower setting each time until you get to the lowest setting. I started my setting on 7 and then eventually lower it down to 2. Make sure pasta is properly dusted with flour before you re-enter pasta through the machine each time. Cut pasta into strips. Set pasta aside to dry.
Place water and salt in a stock pot, and bring to a boil. Once water is boiling, place pasta in water for about 5 to 8 minutes, drain.
I took my pasta and tossed it in butternut squash pureed, which actually looked and tasted like a macaroni and cheese.
Keep in mind you can add other ingredients to your pasta like, lemon zest, roasted red pepper or spinach puree. Add these ingredients before starting the kneading process and make sure they are pureed pretty well before adding.
To complete the dish, I added hand rolled meatballs, and sauteed spinach. My family was very happy and satisfied about the dish even the younger ones.
